ALL ABOUT RESTAURANT ETHICS


I remember meeting Mukesh Rajakonda (26) at The Oberoi Grand, Kolkata in 2010.  At that time, he was a first year Operational Trainee. Within  just two months of  being a trainee in the banquets, he lapped up the  'Star of the Month' award. While working in the Coffee Shop at  Oberoi Grand, Mukesh happened to be the topper in terms of the number of positive guest comments.

Presently, he is working as the F&B Supervisor, at Amara - the All Day International Eatery, at Trident Hyderabad. I requested him to speak on restaurant ethics so that the juniors in the industry will pick up a message or two.

Mukesh said :"when you are in the restaurant, ensure that you are happy within. If not, the guest may figure it out. Guests would love to interact with happy people only. Whatever grief you have, never show it on your face. All guests are equally important. Do not overdo or over serve the foreigners. That may give a bad taste in the mouth for other guests around".

"Anywhere in India, the stewards must know about the local  guests well -  regulars, celebrities and walk ins. Their expectations are very different from In Room Guests. Guests need not speak in English always . In case, the steward can connect with him in the local language that is all a guest needs. Especially women who can't speak in English, one should handle them with utmost care”.

Remember: "All walk in guests are rich. Elites and Socialites come to Five Star Hotels. Make them feel valued and important. Make them feel special. Seek your supervisor's help when you are struck; asking is strength. Ask when you need help. Admit mistakes to the guests. To your supervisor. Do not hide service lapses from your seniors."

Mukesh was the sports captain of his school; he was the state level junior (under 12) Kho-kho player. Has been the runner up in the state level 1500 meters; he was studying in the eighth standard then. Athletics and cricket are his hobbies. He was very active in Grand Oberoi Kolkata in the in house sports activities.

He lives with his mother and elder brother in Hyderabad.
