"WORK CULTURE OF LEMON TREE IS WORTH EMULATING"

"Work atmosphere is amazing; the culture of growing the EWDs (Employees With Disabilities) is what I like most in Lemon Tree Hotels . The performance of “Happy Boys"( employees with Down Syndrome) at Redfox New Delhi is to be seen to be believed"  says Binoy Xavier(40), Executive Chef, Lemon Tree Hotel, Gachibowli, Hyderabad.  "Happy Boys" are employees with mild to moderate intellectual disability who generally reach developmental milestones at a later age. At Redfox they have been integrated into the hotel eco -system so well that they please and pamper the guests in the restaurants like any other normal employee !

It was in 2013 that Chef Binoy became a member of the Lemon Tree family; joined as Executive Sous Chef in Lemon Tree, Guindy, Chennai. After 18 months, he pocketed a promotion as Executive Chef, only to take charge of the entire kitchen operations of this hotel. He joined as the pre-opening Executive Chef at Hyderabad in August 2014.

"It was really a challenging assignment for me" says Chef Binoy, "recruitment of the entire kitchen/kitchen stewarding team, menu development, to vendor negotiations…I got a chance to learn many a new things".


Kerala born Binoy had the good fortune of working with Royal Caribbean International, the largest cruise liner company in the world. Not over, he worked in one of the biggest ship in the world- "Freedom of the Seas". Any time, the ship will have 4,500 passengers and 2,300 employees from 80 different countries. He worked with the cruise liner company for five years, also lapping up three promotions during the period.

"What has been the most exciting part with regard to the Guest Service in the cruise liner? I asked.



"Serving the Malayali guests from all over the world. While, returning from my leave from Kerala, I used to carry with me spices and other ingredients to please the palate of the Malayali guests" says, Chef Binoy, who has visited  20 plus countries.

Married to Roselin. Blessed with two children- Joel (12) and Ann Rose (4). His mother Maria is also living with his family in Kerala.
