"ANGER IS
DANGEROUS"
"Anger will pull you down" warns Chef Adesh Singh (38), Sous Chef, The
Westin Sohna Resort and Spa, Gurgaon,
"something slips thru your fingers, you can pick it up; once you have
spoken something out of anger then you can't take it back. There is no point in
getting angry inside the kitchen. A relaxed mind only can ensure higher
productivity".
It was in 2009, that I had first met Chef Adesh. That too
in Westin Sohna itself.
Chef Adesh is always cool like a cucumber. Always. At
home, or at work. All those working with him will endorse this view.
"Many in the kitchen dept do get angry
unnecessarily; this is neither wanted nor warranted. Treat the coworkers with
lot of respect. Nowadays everyone is educated. No point in quarrelling. Even trainees
are very important; even they have self respect. We should make them feel
respected. The kitchens are generally hot, temperature wise; but hot headed Chefs
do not deserve respect. There is a belief that things will happens only when
you talk angrily. This thinking should change".
Chef Adesh's foreign assignments includes the three year
stint with Taj Palace in Dubai, one year association with a 190 seater
restaurant in Kuwait, and 18 months exposure with Sheraton Jumerah Beach Resort
in Dubai. Once, he has been to Pakistan to learn the Pakistani Cuisine. Last
year, he flew to Greece to orchestrate the Indian Food Festival in Arion Hotel
in Athens, a luxury collection property.
"People in the Food production department should be
interested in Training classes conducted regularly at the hotels. It may or may
not be related to cuisine. One should make it a point to learn consistently on
a daily basis. We can learn even from the guests, in case, one is ready to
learn".
Chef Adesh lives in Rajapuri, Uttamnagar in Delhi. He
lives with his parents. Married to Hemalatha, a homemaker. Son Gaurav (15) daughter Anjali (12)
It was in June 2009 , Chef Adesh landed The Westin Sohna
Resort & Spa, Gurgaon.
