FROM THE TRIDENT BHUBANESWAR ......4

"LARGEST GROWING BUSINESS IN INDIA IS FOOD"

"Today, largest growing business in India is FOOD. Chefs as a profession and
food as business, both have unlimited possibilities with scope for tremendous, incredible growth. In Oberoi Group of Hotels, we do customize the food as per palate, preference and taste of the guests, individually; because of this by default, the interaction of the Chefs with esteemed guests have become more predominant", says Suprakash Tripathy (36), The Executive Chef, Trident Bhubaneswar.

"Mechanization, technology, innovative trends etc have made things more challenging for the Chefs. The responsibilities of an Executive Chef are much more than diverse than it has been a decade ago- ensuring discipline in the kitchen to governance to tracking the guest satisfaction scores to orchestrating food festivals...."

"The guests of Oberoi Group of Hotels are very elite and knowledgeable; thanks to the knowledge explosion due to the social media. Every TV channel Anchors a dedicated cookery show; the celebrity Chefs do enjoy massive fan following; thru YouTube, one can learn on cuisine. From chocolate tempering, to cuisine specific dishes to cake making to whipping up classical dishes like Chettinadu (Tamilnadu) Moilly (Kerala), Lal Maas (Rajasthan) and Rogan josh (Kashmir)".

Bhubaneswar born Chef Suprakash took his Hotel Management degree from IHM Chennai in 2000; soon he joined the Oberoi Group, cleared OCLD in 2002, worked in Oberoi Mumbai for nearly two years as Kitchen Executive. Grand Oberoi Kolkata was his next stop as Sous Chef, followed by Trident Chennai in the role of a senior Sous Chef. Has been working in Trident Bhubaneswar since 2009 as Executive Chef.

"The first ten years, focus on developing your knowledge and skills. This period is very crucial because it can make or break any Chef. As you grow up the ladder, cooking becomes lesser and kitchen management takes more of your time" quips Chef Suprakash. His father retired as the Post Master General in West Bengal, based in Kolkata. His mother was also a working woman. She took a VRS from Steel Authority Ltd, Rourkela.

Suprakash is married to Anamika, a postgraduate in Arts. She is presently pursuing her studies to don the role of a Company Secretary.
