RIVAAYAT MIRACLE......14

"ACHE DIN AAANE WALE HAIN"

                                                

"RIVAAYAT will always remain close to my heart. I will continue practicing all what I have learned in those few days till I achieve perfection. This culinary conclave was the first of it’s kind which the Oberoi Group has organized to train us so that we can deliver authentic Indian dishes to our esteemed guests" says Chef Gaurav Sircar, Senior Kitchen Executive, at The Oberoi Grand, Kolkata.

"What made me really excited was" says Chef Gaurav, “that I was perhaps one of the youngest to participate in this conclave. In the age of molecular gastronomy, we found out the real essence of authentic Indian food. We will use the RIVAAYAT learnings to dazzle and delight our guests".

                                               
"It was both a learning experience as well as an eye opener in terms of rejuvenating and reviving lost recipes from the streets, lanes and by lanes of India like the Fried chicken, Chooza Khas Makhni etc.....Maa Chole Ki Dal is my favorite...l also liked the Nihari

( the traditional lamb stew).It is Sumesh (CDP) who has learnt the maximum RIVAAYAT tricks and tips in the Oberoi Grand, Kolkata ...in fact he is like a brother to me...I have learnt so much from him in the last three years...".

(Note: Chef Sumesh, the Keralite boy is a load bearing pillar of The Oberoi Grand kitchen. Since 2007, ever since I met him for the first time, every year, in my note of appreciation written to the GM of this hotel Sumesh’s name will surely appear. He is a great asset to the Oberoi Group. I am not at all surprised).

Cooking itself is Chef Gaurav' hobby. Not for him, the four wheeler driving. He loves riding his Royal Enfield 300 cc bike as much as he loves his wife Neelam Saini, Chef-turned- entrepreneur. In her last assignment with Oberoi, Neelam was a CDP (Chef de partie) at the Oberoi Gurgaon.


                                              



"I am really lucky" opined Gaurav on his participation in RIVAAYAT. He also added “now, we have to replicate the RIVAAYAT dishes in a big way in the days to come".
