OPPORTUNITY
"I have handled big weddings as a Banquet Manager in
Taj Mahal, Mumbai. But the rain at Arpita khan's wedding has been the most challenging moment I had ever faced in
my ten year career" says Anup Sheth

Ceremony is just over...the elite guests, around 300 plus are all over the
facade area in a joyous mood… People have started drinking...snacks were being circulated.....
Chefs had ensured that food has been laid as per the plan...everything under
control...operations are smooth.....
"Then came the challenge, it started
drizzling...soon it became a rain...we first shifted the Bar to the first
floor, then snacks counters and finally the food counters...thanks to the Walkie
Talkies..We had 12 of them...everything was rearranged at Jade Terrace and the
Hooka Lounge…around 20 boys protected the ten feet, three tier, 150 kg cake
which was kept in the lawns in the facade area...not over...after 45 minutes
when the rain abated the guests requested us to shift the Bar back in the
facade area; that also was done".
Now, the message: In spite of rain and the other
operational problems, everyone in the F&B service team have been on the
same page; everyone stuck on; they took it as a challenge; importantly, other
staff members also came in voluntarily to offer help in this moment of crisis.
"Believe it or not, many of us in the Palace have
been working continuously for 40 hrs in connection with the Arpita Khan's
wedding. We thoroughly enjoyed serving the guests" informs Anup Sheth.
Every crisis is an opportunity. Isn't it?
Anup started his career as a Supervisor Trainee, in Taj Mahal Mumbai, after passing out from
IHM, Ahmedabad. He was working as the Restaurant Manager of Shamiana, when he got transferred to
the Vivanta property in Aurangabad. In Sep 2014, he took over as Asst F&B
manager in Taj Falaknuma Palace.
Anup Sheth is married to Surbhi, a journalist by profession.
